Sugar-Free Apple Cranberry Crisp in the Ninja Foodi (with video!)

Making sugar-free desserts are totally still the rage and as we approach the full swing of the holidays, this quick and easy Ninja Foodi apple cranberry crisp is a great way to treat anyone with a diabetic-friendly sweet. This does use a touch of maple syrup but there are plenty of sugar-free maple syrups out there if you’re in need of a truly sugar-free dessert.

The Ingredients

I love the combination of fall fruit and tart cranberries. Cranberries are low in natural sugars and are found frozen if they aren’t available fresh in your area. The toppings are also low in carbs so you could get away with having a small amount and stick to your keto lifestyle if your diet allows for a bit of fruit.

  • cranberries

  • arrowroot

  • maple sugar

  • lime juice

  • unsweetened shredded coconut

  • ground almonds or tigerenut flour for AIP

  • coconut flour

  • melted coconut oil

  • maple syrup

Cut The Fruit

I suggest a ratio of fruit but feel free to use any combination in any proportion. Cut them up into the same size a the cranberries and toss them with starch, maple sugar, and lime juice. Put them in the bottom of your 7″ springform pan.

Make The Topping

Then comes the topping. Easy! Combine all of the rest of the ingredients together and spoon them over the top of the fruit evenly.

Cook in The Ninja

This is where the magic happens. Put your sugar-free crisp onto a rack in the Ninja Foodi. Don’t forget to cover it with tin foil. The Foodi is really good at cooking this apple crisp. Cover it for about 25 minutes. Uncover it and cook it until the fruit in the middle can be pierced easily with a knife, about 15 more minutes. Enjoy with some sugar-free ice cream warm or cold!

Equipment

  • 7" springform pan

  • Ninja Foodi

  • Sheet Tin Foil

Ingredients  

Fruit Layer

  • 2 cup apples cored and cubed

  • 2 cup pears cored and cubed

  • ½ cup cranberries frozen or fresh

  • 2 tsp lime juice

  • 1 tbsp maple sugar find out how to make it here

  • 2 tbsp corn starch or arrowroot starch

Topping

  • ¾ cup unsweetened shredded coconut

  • ⅓ cup ground almonds or tigernut flour if AIP

  • ¼ cup corn starch or arrowroot starch

  • 2 tbsp coconut flour

  • ¼ cup coconut oil melted

  • ¼ cup maple syrup

Sides

  • Ice Cream (optional, sugar-free if desired)

Instructions 

  • Set the Air Crisp rack at the bottom of your Ninja Foodi. Preheat on Bake setting at 325F. Doesn't need to be on for a specific amount of time before you cook, just have it going while you prep the ingredients.

  • Meanwhile, combine all of the Fruit Layer ingredients together in one bowl.

  • In another bowl combine all of the Topping Ingredients together.

  • Put the Fruit Layer in the bottom of the Insta-Pan. Spoon the Topping Ingredients overtop and spread out to cover any exposed fruit.

  • Cover with a sheet of tin foil and carefully put into the preheated Ninja Foodi.

  • Cook on the Bake setting for 25 minutes.

  • Carefully uncover the pan by removing the tin foil.

  • Cook again on the Bake setting for 15 more minutes or until a knife poked through the center of the crisp goes through the fruit easily.

  • Serve warm or cold with optional ice cream.
