I love this recipe because I use it for everything milky a recipe calls for whether it be cream or plain milk. When you cook cashew milk in something, it thickens up all on its own. Take extra care, however, when cooking with it and keep stirring as the cashew pulp can stick to the bottom.
DIY Cashew Milk
Makes 1 Liter
1 cup raw cashews
1 liter water
Soak cashews overnight (or at least two hours), covered with 1” of water.
Drain and rinse cashews and place in a high powered blender.
Blend for 1 minute, covered.
Place in a jar and enjoy for up to 1 week.
