Hey party peeps! The second last summer long weekend just wrapped up here in Canada. We love to have BBQs and I know some of you have some leftovers! This Summer Salsa is a great way to use up your over ripening peaches and tomatoes and boiled corn that weren't all used up during your burger dinner party the other night.

Sweet potato and beet chips work well with this salsa. These are store bought.

Serve with tacos, chips, you name it! This salsa is fresh tasting and versatile!
Smokey Corn and Peach Salsa
Gluten-free, Dairy-free
Kernels from 2 cobs of corn, cooked and cut off the cob
3 ripe and soft peaches, cut off the pit and chopped
2 ripe tomatoes, chopped
1 tbsp garlic, crushed
3 tbsp lemon juice
1/4 tsp dried basil
1/2 tsp cumin
1/2 tsp chili powder
1 tbsp olive oil
1/2 tbsp salt
1/2 tbsp sugar
1/2 tsp smoked ground pepper (regular pepper is fine too, add a drop or two of liquid smoke if you have it!)
