Bluesfest has come to an end for another year. There was some OK food. One has to be open minded and/or make polite creative suggestions like the loaded hot dog on chips. Or you can bring you own food, like I did with the chicken salad (recipe posted below).
There was surprisingly some blues music - but - you are now going Bluesfest to see an eclectic selection of music. You go for one act and end up catching something unexpected.. pretty dope.
All in all it was a great festival. New gourmet 'from scratch' food vendors were my favourite new addition and there were a couple good wine selections.. I do feel as though I was creeping into diabetes after drinking all those ciders. My bad though, I haven't had much self control in the food department and am certainly feeling it! My allergist is going to be pissed.. BUT that's for another blog post. Here's my recipe for my Thai-Inspired Chicken Salad! Great for a picnic cooler!
Peanut chicken salad
serves 4, grain free, dairy free, gluten free
2 chicken breasts, cooked and chopped
2 cups carrots, shredded
1 medium onion, thinly sliced
2 garlic scapes, chopped finely
1/2 cup peanuts, chopped
2 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp honey
1/2 tsp fish sauce
Optional nutrition boosters!
2 tbsp chia seeds
2 tbsp hemp hearts
1/4 cup rehydrated wakame, chopped
Mix all ingredients together - taste for seasoning to see if you need some fresh cracked black pepper and/or salt.
