Smoked Meat Scrambled Eggs

The goodness of eggs cannot be understated! Here’s a recipe using Ferme Reveuse’s delicious eggs. I’ve consistently been getting them delivered to me for a couple of years. Whenever I eat regular store bought eggs, I realize how much they lack in flavour.

Smoked Meat Scrambled Eggs
Serves 2, gluten free

4 Ferme Reveuse eggs

2 tbsp goat milk (or other milk)

salt and pepper to taste

1 tbsp goat butter

1/3 cup chopped smoked meat*

1 green onion, chopped

Baked beans for serving, this is a great recipe if you have a can of beans on the ready (optional)

Fruit for serving (optional)

Whisk eggs in a bowl with milk, salt and pepper.
Add butter to a small saucepan and heat up over medium heat.
Add in whisked eggs to the saucepan and using a flat bottomed wooden spoon, stir the eggs scraping the bottom of the pan.
When the eggs are about half way cooked, add in the smoked meat and green onions. Continue stirring with the wooden spoon until cooked to your desired doneness.
Serve with baked beans and fruit, if you like!

*Note. Use any leftover meat: grilled steak, ham, salami, cured sausage, etc
