Below is my recipe for Eddie Meatloaf. Please watch the video for reference.
Meatloaf d'Eddie with Hot Patooty Glaze
serves 1 hungry dinner party
Ingredients
2 lbs ground Eddie (substitute with 1lb ground beef & 1lb ground pork)
2 eggs, whisked
1 cup ground almonds (also known as almond flour)
2 tbsp butter plus more for greasing
1 medium onion, peeled and minced
1 medium carrot, peeled, tipped and minced
1 stalk celery, minced
2 stalks green onion, green and white parts minced
3 cloves garlic, peeled and minced
2 tsp salt
1/2 tsp ground white pepper
1/2 tsp cayenne pepper
1/2 tsp dry marjoram
1 tbsp worchestershire sauce
1/3 cup ketchup
Hot Patooty Glaze
1/4 cup BBQ sauce
2/3 cup ketchup
1/4 cup honey
2 tbsp balsamic vinegar
1 tsp cayenne pepper
1/2 tsp ground black pepper
Place oven rack on the second last part of the oven. Preheat oven to 350F.
Combine ground Eddy, eggs and ground almonds together. Set aside
Sautee onion, carrot and celery in butter over medium heat in a saucepan for 5 min, stirring occasionally. Add green onions and garlic, stir to combine and sauté for 2 min. Stir in salt, white pepper, cayenne, marjoram, Worcestershire sauce and ketchup. Set aside off the heat to cool for 2 min. Stir into ground meat mixture.
Grease a 5" x 9" loaf pan with additional butter. Place meatloaf mixture into pan, pressing down with a spatula trying to prevent air pockets from getting trapped.
Place a large piece of tin foil over a sheet pan and pinch up the edges of the foil to create walls. This will help catch juices that come out of the loaf pan. Carefully invert loaf pan onto tin foil. Bake in oven for 30min.
Remove from oven. Carefully remove the loaf pan leaving the meatloaf on the tin foil. Return to oven and bake for an additional 40min.
Meanwhile make the glaze. In a saucepan combine all of the ingredients and whisk together over medium heat. Bring to a simmer and let it bubble for 2min. Set aside.
Remove from oven and pour and spread 1/3 off the glaze all over. Increase temperature to 450F. Place back into the oven and bake for 4min. Remove and repeat the process with another third of the glaze. Bake for 4 min. Serve with remaining glaze.
