Move over two-bite brownies, make your own homemade mini banana bread using a silicone mold right in your air fryer! They come together super quickly in the blender and are low carb. I haven’t tried making them in the oven but I imagine if you follow the recipe and put the portions in mini muffin tins I’m sure you can bake them in about 7 minute at 350. If you want them to be a little sweeter, use overripe bananas but in my case, I used just-yellow bananas. They don’t taste the best raw but are higher in nonglycemic spiking resistant starches that’ll curb any carbohydrate sensitivity. Like banana bread sweeter? These are super versatile in that you can add frosting on top to make mini cupcakes if you want them a bit sweeter.
The Ingredients
I purposely made this recipe simpler. You’ve seen chocolate chips, zucchini, walnuts, pecans, banana chips, etc all in or on top of banana bread. I wanted to provide you with a simple recipe. I added a few chocolate chips and walnuts to the bottom of a few of the silicone molds and it turned out successfully. So if you wanted to add a few toppings to the banana bread, add no more than 1 tsp of nuts or chocolate to each mold before adding the batter. Otherwise, just follow along and use these ingredients!
The vinegar might be a strange addition but I find that the addition of a small amount is great for leavening gluten-free quick bread such as this. Don’t worry, you don’t taste it!

Blend the Ingredients
You heard that right! Simply throw all the ingredients together in a blender and blend! No mashing with a fork or masher, no separating wet and dry ingredients. Just blend until fully incorporated! If you’re intending on adding any chocolate or nuts, do not add them to the blender.
Scrape Down the Sides
Sometimes when blending, you need to make sure all of the ingredients are fully incorporated. To do this, just use a silicone spatula and scrape down the sides. Blend again for 10-15 seconds. Preheat the air fryer and get ready to fill the silicone mold!
Fill the Silicone Mold and Air Fry
Spray the mold with cooking spray and add the batter. Less is more! I like using a cookie scoop to make sure I put an even amount. Barely fill the silicone mold halfway, only about 1 1/2 tbsp worth of batter. Air fry until a toothpick inserted comes out clean, just like baked banana bread. Since this recipe contains almonds, they brown quicker than regular banana bread. About halfway through check on the mini banana bread and cover with tin foil if they are getting too dark too quickly. This is especially true if you have a very small narrow air fryer like mine. The egg bite mold sits a bit high in my air fryer basket and is therefore close to the element. Bake for the remaining time. Remove from the air fryer and let it cool for 1 minute before taking them out. They should pop out easily but if you want to be extra sure, run a butter knife along the edge of the banana bread bites. Repeat with the remaining mixture.

Ingredients
2 large eggs
2 bananas
1 tbsp honey
2 tsp vanilla
1 tsp apple cider vinegar
1⅓ cup blanched ground almonds aka almond flour
2 tsp cinnamon
¾ tsp baking soda
¼ tsp kosher salt
chocolate chips or chopped nuts optional
Instructions
Add all of the ingredients to a blender. Blend for 45 seconds. Scrape down the sides to re incorporate any ingredients that haven't blended. Blend again for 15 seconds.
Preheat air fryer to 330F.
Spray silicone mold with cooking oil spray.
Fill each mold with about 1 ½ tbsp batter. Optionally add 1 tsp nuts or chocolate to the bottom of each mold before adding batter. *see note
Air fry 4 minutes. Check to see if it is browning. If it's approaching dark golden brown, cover the entire surface of the egg bite mold with tin foil. Air fry for 5-6 more minutes or until a tooth pick inserted comes out clean.
Allow the banana bread to cool 1 minute. Score around the edges with the back of a butter knife to release the bread from the sides. Pop them out gently.
Repeat cooking the banana bread by spraying again with cooking spray, filling and baking again. If you've added chocolate chips or some of the bread stuck to the outside edges, you may need to wipe out the silicone mold before spraying and continuing to cook with the remaining batter.
